- 1 cup mozzarella cheese, cubed
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- Salt and pepper to taste

Instructions
- Preheat your air fryer to 375°F (190°C).
- In a bowl, mix cooked risotto, mozzarella, Parmesan, egg, salt, and pepper.
- Form the mixture into small balls, about 1 inch in diameter.
- Roll each ball in breadcrumbs until fully coated.
- Spray the air fryer basket with cooking spray.
- Place arancini in the basket, leaving space between each.
- Air fry for 10-12 minutes, or until golden brown and crispy.

- Serve with marinara sauce for dipping.
