Instructions
- Preheat your air fryer to 400°F (200°C).
- Boil the baby potatoes in salted water until fork-tender, about 15 minutes.
- Drain the potatoes and let them cool slightly.
- Place the potatoes on a parchment-lined baking tray and gently smash each one with a fork.
- Drizzle olive oil over the smashed potatoes and season with salt and pepper.
- Transfer the smashed potatoes to the air fryer basket in a single layer.
- Air fry for 15-20 minutes until crispy and golden brown.
- In a bowl, mix sour cream, Dijon mustard, and apple cider vinegar.
- Add the crispy potatoes, green onions, and parsley to the bowl and toss to combine.
- Serve warm or at room temperature.
