Ingredients

Instructions

  1. Preheat the air fryer to 380°F (193°C).
  2. Slice the eggplants and sprinkle with salt. Let sit for 30 minutes.
  3. Rinse and pat dry the eggplant slices.
  4. Mix breadcrumbs, parmesan, pepper, garlic powder, and Italian seasoning in a bowl.
  5. Dip each eggplant slice in the breadcrumb mixture.
  6. Place the coated slices in the air fryer basket in a single layer.
  7. Cook for 10 minutes, flipping halfway through.
  8. Top each slice with marinara sauce and mozzarella cheese.
  9. Cook for an additional 5 minutes until the cheese is melted.
