- 2 cups shredded mozzarella cheese

- 1 teaspoon Italian seasoning
Instructions
- Preheat the air fryer to 380°F (193°C).
- Slice the eggplants and sprinkle with salt. Let sit for 30 minutes.
- Rinse and pat dry the eggplant slices.
- Mix breadcrumbs, parmesan, pepper, garlic powder, and Italian seasoning in a bowl.
- Dip each eggplant slice in the breadcrumb mixture.
- Place the coated slices in the air fryer basket in a single layer.
- Cook for 10 minutes, flipping halfway through.
- Top each slice with marinara sauce and mozzarella cheese.
- Cook for an additional 5 minutes until the cheese is melted.

- Serve with fresh basil for added flavor.
