Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon flour
  • 1 tablespoon olive oil

Instructions

  1. Drain and rinse the soaked chickpeas.
  2. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, cayenne pepper, and flour.
  3. Pulse until the mixture is coarse and well combined.
  4. Form the mixture into small balls or patties.
  5. Preheat the air fryer to 375°F (190°C).
  6. Brush the falafel with olive oil and place in the air fryer basket.
  7. Cook for 15 minutes, turning halfway through, until crispy and golden.

Notes

  • Serve in wraps with your choice of vegetables and sauces.
  • Can be made in advance and stored in the refrigerator.
