Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 bell pepper, diced

  • 1 cup cherry tomatoes, halved

  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Preheat air fryer to 400°F.
  4. In a bowl, mix diced bell pepper, zucchini, and cherry tomatoes with olive oil, garlic powder, salt, and pepper.
  5. Add the vegetables to the air fryer basket and cook for 10 minutes, shaking halfway through.
  6. Stir spinach into the cooked quinoa.
  7. Serve quinoa topped with air-fried vegetables.
