- 1 cup quinoa
- 2 cups vegetable broth
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Preheat air fryer to 400°F.
- In a bowl, mix diced bell pepper, zucchini, and cherry tomatoes with olive oil, garlic powder, salt, and pepper.
- Add the vegetables to the air fryer basket and cook for 10 minutes, shaking halfway through.
- Stir spinach into the cooked quinoa.
- Serve quinoa topped with air-fried vegetables.
