Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. In a bowl, mix flour and powdered sugar. Add butter and blend until crumbly.
  3. Press the mixture into the bottom of a greased air fryer-safe pan.
  4. In another bowl, whisk eggs, granulated sugar, lemon juice, lemon zest, and baking powder.
  5. Pour the lemon mixture over the crust in the pan.
  6. Cook in the air fryer for 15-20 minutes, or until set.
  7. Let cool before slicing into bars.
