Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. In a bowl, mix flour, powdered sugar, and softened butter until crumbly.
  3. Press the mixture into the bottom of a greased air fryer-safe pan.
  4. Bake the crust in the air fryer for 10 minutes.
  5. In another bowl, whisk eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
  6. Pour the lemon filling over the crust.
  7. Return the pan to the air fryer and cook for 15 minutes.
  8. Let the bars cool before cutting into squares.
