Ingredients

- 1 cup quinoa
- 2 cups water
- 2 chicken breasts
- 1/4 cup pesto
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil, then reduce heat and cover for 15 minutes.
- While quinoa cooks, season chicken breasts with salt and pepper.
- Coat chicken with pesto.
- Preheat air fryer to 375°F (190°C).
- Place chicken in the air fryer basket and cook for 15-20 minutes, until fully cooked.
- Once quinoa is done, fluff with a fork.
- In a bowl, combine quinoa, spinach, and cherry tomatoes.
- Slice cooked chicken and place on top of the quinoa mixture.
Notes
- Adjust cooking time based on chicken thickness.
- Use store-bought or homemade pesto.
- Add other vegetables as desired.
