Air fryer pesto chicken quinoa bowl: 5 simple steps to delight

Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 2 chicken breasts
  • 1/4 cup pesto
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil, then reduce heat and cover for 15 minutes.
  3. While quinoa cooks, season chicken breasts with salt and pepper.
  4. Coat chicken with pesto.
  5. Preheat air fryer to 375°F (190°C).
  6. Place chicken in the air fryer basket and cook for 15-20 minutes, until fully cooked.
  7. Once quinoa is done, fluff with a fork.
  8. In a bowl, combine quinoa, spinach, and cherry tomatoes.
  9. Slice cooked chicken and place on top of the quinoa mixture.

Notes

  • Adjust cooking time based on chicken thickness.
  • Use store-bought or homemade pesto.
