- 4 medium russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- Wash and dry the potatoes. Prick them with a fork.
- Rub the potatoes with olive oil, salt, and pepper.
- Air fry the potatoes for 30 minutes, turning halfway through.
- Remove the potatoes and let them cool slightly.
- Slice the potatoes in half and scoop out some flesh, leaving a thin layer.
- Air fry the potato halves for an additional 10 minutes until crispy.
- Fill the skins with cheese and return to the air fryer until the cheese melts.
- Top with sour cream and green onions before serving.

- Adjust cooking time based on potato size.
- Feel free to add other toppings like bacon bits.
